No Bake Brownies | Plant Based/Refined Sugar Free

I find myself craving brownies a lot. They were my favorite snack before I went plant-based and they're still my favorite snack. These brownies are as close to 'healthy' as I could get them and I promise you both dairy and nondairy eaters will enjoy them. 1 cup Medjool Dates
1/2 cup Almond Flour
1/2 cup Oat Flour
1/2 cup Cacao Powder
1/4 cup Almond Butter
1 tsp Vanilla Extract
1/4 cup Walnuts  
Pinch of Salt
Agave (optional)


Pit the Medjool Dates and add them to a bowl of hot water. Set aside for 20 minutes.

Mix all the dry ingredients into a large bowl.

Drain the dates, then add them to a food processor or high-speed blender with the Almond Butter and Vanilla Extract. Process until smooth.

Add the Date and Almond Butter mixture to the bowl with the dry ingredients. Feel free to use your hands once the mixture thickens. 

Transfer the brownie mix to a loaf pan lined with parchment paper, then use your hands or a spatula to spread it out evenly in the pan.

Top with crushed walnuts. 

Let brownies sit in the fridge for an hour (or more) to stiffen up. Remove and slice as desired then enjoy!
